| Cranberry Relish over Brie |
| 2 cups cranberries, coarsely chopped
2 red bell pepper, cored, seeded, and diced 1 medium onion, finely chopped 1/2 cup apple cider vinegar 3/4 cup sugar 1-2 jalapeņo peppers, minced 1/4 teaspoon cayenne Brie Cheese, wheel or slab, top mold sliced off |
| In a saucepan, combine all the ingredients except the cheese. Bring to a boil, reduce heat and simmer, stirring occasionally, until the mixture thickens, about 30 minutes. This mixture can be refrigerated for later use in this recipe. Pour mixture over the brie in an attractive baking dish with sides. Bake at 325 for 20 minutes. Serve warm with crackers, chips, etc. |
